Crockpot Rump Roast with Vegetables

Crockpot rump roast

A crockpot rump roast is a budget-friendly Sunday dinner. Rump roast is leaner than chuck, so it needs gentle, moist heat to turn tender, which is exactly what a slow cooker provides.

It cooks all day with potatoes, carrots and herbs, and the juices become a simple gravy.

Tips for the Best Crockpot Rump Roast

  • Sear for flavor. Lean cuts benefit from the browned crust.
  • Slice against the grain. Or shred if very tender.
  • Cook on LOW. Lean rump roast can tighten up on HIGH.
  • Keep it moist. Slice or shred the roast and return it to the juices before serving.

What to Serve with Crockpot Rump Roast

Serve with the vegetables and gravy, plus green beans and rolls. Leftovers make great Italian beef-style sandwiches.

Easy Variations

  • Onion soup. Use 1 packet onion soup mix instead of the salt and herbs.
  • Balsamic. Add 2 tbsp balsamic vinegar.
  • Mushroom. Add 8 oz whole mushrooms.

How to Store and Reheat

Refrigerate in the juices up to 4 days or freeze up to 3 months.
