How to Make Crockpot Beef Stroganoff

Step 1: Coat the beef

Toss the beef with the flour, salt and pepper.

Step 2: Load the crock

Add the onion, mushrooms and garlic to a 6-quart slow cooker, then the beef. Whisk the broth, Worcestershire and Dijon and pour over.

Step 3: Slow cook

Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the beef is tender.

Step 4: Make it creamy

Whisk 1/2 cup of the hot liquid into the sour cream and cream cheese, then stir the mixture into the crock. Cover and cook on LOW 15 minutes. Do not boil.

Step 5: Serve

Spoon over hot egg noodles and sprinkle with parsley.

Tips for the Best Crockpot Beef Stroganoff

  • Temper the sour cream. Mixing it with hot liquid first prevents curdling.
  • Use full-fat sour cream. Low-fat versions can split.
  • Brown for more flavor. Sear the floured beef in batches.
  • Cook noodles separately. They stay tender and do not soak up all the sauce.

What to Serve with Crockpot Beef Stroganoff

Serve over egg noodles, rice or crockpot mashed potatoes, with roasted green beans.

Easy Variations

  • Ground beef. Use 2 lb browned ground beef and cook 4 hours on LOW.
  • Chicken. Use boneless chicken thighs and chicken broth.
  • Extra mushrooms. Use 16 oz mushrooms.

How to Store and Reheat

Refrigerate up to 3 days. Reheat gently; cream sauces can separate if boiled. Freezing is not recommended once the sour cream is added.
