Crockpot lasagna soup gives you everything you love about lasagna (beefy tomato sauce, tender noodles and melty cheese) without boiling noodles or building layers. The soup simmers all day, you stir in broken lasagna noodles at the end, and each bowl gets a scoop of ricotta, mozzarella and parmesan.
It is one of our most requested fall soups.
Why You Will Love This Crockpot Lasagna Soup
- No layering. Break the noodles right into the pot.
- Cheesy topping. The ricotta mix melts into every spoonful.
- Weeknight friendly. 15 minutes of prep.
- Kids love it. It tastes just like lasagna.
Ingredients for Crockpot Lasagna Soup
- Ground beef: 1 lb (450 g), browned and drained. Ground turkey also works.
- Lasagna noodles: 8 oz (225 g) regular noodles, broken into pieces and added near the end so they do not turn mushy.
- Ricotta topping: Ricotta mixed with parmesan and mozzarella, spooned on each bowl.
How to Make Crockpot Lasagna Soup
Step 1: Brown the beef
Brown the beef with the onion in a skillet, about 8 minutes. Drain the fat and stir in the garlic.
Step 2: Slow cook the soup
Transfer to a 6-quart slow cooker with the crushed tomatoes, tomato paste, broth, Italian seasoning, salt and pepper flakes. Cook on LOW for 6 hours or HIGH for 3 hours.
Step 3: Cook the noodles
Turn to HIGH, stir in the broken noodles, and cook 30 to 45 minutes until tender, stirring once. Stir in the spinach for the last 5 minutes.
Step 4: Make the topping
Mix the ricotta, parmesan and half the mozzarella.
Step 5: Serve
Ladle into bowls, top with a spoonful of the cheese mixture and the remaining mozzarella, and finish with basil.
Tips for the Best Crockpot Lasagna Soup
- Add noodles last. Noodles cooked all day turn to mush.
- Make extra broth. Noodles keep absorbing liquid; add 1 more cup of broth when reheating.
- Cook noodles separately for leftovers. If you expect leftovers, boil the noodles on the stove and add them to each bowl.
- Season the ricotta. A pinch of salt and pepper in the cheese mix makes a big difference.
What to Serve with Crockpot Lasagna Soup

Easy Variations
- Turkey. Use ground turkey and chicken broth.
- Veggie. Skip the meat and add zucchini and mushrooms.
- Spicier. Add more red pepper flakes.
- Gluten-free. Use gluten-free lasagna noodles.
How to Store and Reheat
Refrigerate up to 4 days; the noodles absorb broth, so add more when reheating. Freeze the soup without noodles for up to 3 months.
Equipment I Used
- 6-quart slow cooker: the right size for this recipe. Fill it between half and two-thirds full for even cooking.
- Large ceramic pasta and soup bowls: deep enough for stews, soups and saucy dinners.
- Teak wood soup ladle: will not scratch the ceramic crock insert.
- Large airtight food storage container: for leftovers and freezer portions.
