Induction cooktops heat pans with magnetism instead of flame or a hot coil, so they are fast, efficient and easy to clean. But only certain cookware works. Here is how to tell if your induction kitchenware is compatible and what to buy.
The Short Answer
Induction needs cookware with a magnetic base. If a fridge magnet sticks firmly to the bottom of the pan, it will work. Cast iron, enameled cast iron, carbon steel and most magnetic stainless steel pans work. Pure aluminum, copper and glass do not unless they have a magnetic base plate.
The Magnet Test
Hold a magnet to the bottom of the pan. A strong grip means it works on induction; a weak grip may heat slowly; no grip means it will not work. Many pans are also marked with an induction coil symbol.
Cookware That Works
| Material | Induction? |
|---|---|
| Cast iron | Yes |
| Enameled cast iron | Yes |
| Magnetic stainless steel | Usually |
| Carbon steel | Yes |
| Aluminum or copper | Only with a magnetic base |
| Glass and ceramic | No |
Induction-Friendly Pans
Magnetic stainless steel pans like the stainless steel honeycomb frying pan and the stainless tempura pan with thermometer are good candidates; always check the base with a magnet or the product description before buying.
Tips for Cooking on Induction
- Induction heats very fast; start one step lower than you would on gas.
- Match the pan size to the burner ring.
- Use flat-bottomed pans for full contact.
- Lift pans rather than sliding them to avoid scratching the glass.
- Clean the glass top with a soft cloth; see stainless steel cleaning tips.
Utensils for Induction
Any utensil works, but use wood or silicone on non-stick pans; see wooden cooking utensils.
Equipment I Used
- Large airtight food storage container: for leftovers and freezer portions.

Induction Cookware FAQ
How do I know if cookware is induction compatible?
If a magnet sticks firmly to the base, or it has an induction symbol, it will work.
Does stainless steel work on induction?
Most magnetic stainless steel does. Some high-nickel stainless pans are not magnetic; use the magnet test.
Does cast iron work on induction?
Yes. Cast iron and enameled cast iron work very well.
Can I use non-stick pans on induction?
Only if they have a magnetic base.
