Ingredients

  • 6 lb apples peeled, cored and sliced (2.7 kg)
  • 3/4 cup packed brown sugar (150 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 tbsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 tbsp lemon juice
  • 1 tbsp vanilla extract

Method

  1. Add the apples to a 6-quart slow cooker. Sprinkle with the sugars, spices, salt and lemon juice and toss. It will look very full; the apples cook down a lot.
  2. Cover and cook on LOW for 10 hours, until the apples are very soft and dark.
  3. Stir in the vanilla and blend until smooth with an immersion blender (or in batches in a blender, venting the lid).
  4. Cook uncovered on HIGH for 1 to 2 hours, stirring occasionally, until thick. A spoonful on a cold plate should hold its shape without watery edges.
  5. Cool, then spoon into clean jars and refrigerate.

Notes

Makes about 6 cups (48 servings of 2 tbsp). Cook time includes 10 hours on LOW plus about 2 hours uncovered on HIGH.
